Ingredients

    2 Eggs
    2 Egg Whites
    2 Tsp Coconut Oil
    1 Banana, sliced
    1 tbsp grated, unsweetened coconut
    Cinnamon to taste

Directions

Mix eggs and egg whites
Heat 1 tsp coconut oil in a fry pan
Cook eggs as an omelette. When done, put omelette on a plate
Heat 1 tsp coconut oil in a fry pan
Fry banana. Place on top of the omelette. Sprinkle coconut over.
Sprinkle cinamon on top

Options
This recipe can be adjusted however you like. Take out the egg whites and just use 3 eggs, use 1 banana, throw some crushed nuts on top. Experiment and let me know how you go.
