Ingredients

14 ounce can diced tomatoes with chiles
1 medium onion, diced
3 cups shredded turkey breast
8 corn tortillas
1/4 cup salsa
2TB fat free sour cream
2TB cilantro
1 cup lettuce, shredded
1/2 cup shredded mexican cheese
Directions
Spray both sides of corn tortilla with cooking spray. Put in a 375 degree oven for 10 minutes, flip half way through.
Bring tomatoes and onion to a boil. Simmer for 15 minutes until onion is soft and clear. Add turkey and heat through.
Mix salsa, sour cream, and cilantro.
Spread salsa mix on tortilla, then top with turkey mix, cheese, and lettuce.
Serving Size: makes four servings (two tostadas each)
