Introduction

This is the definition of comfort food - with a low-cal twist. Any biscuit recipe will work for the dumplings, but this one is the lowest-fat I could create! Ingredients

    Dumplings:
    1 c and 4 tbsp self-rising flour
    1/3 c applesauce
    1/2 c Almond breeze

    64 oz (8 cups) chicken broth
    12 oz. oven roasted chicken
    1 can fat free evaporated milk
    1/4 c flour

Directions

For dumplings:
Mix self-rising flour, applesauce and almond milk together. Roll on floured surface until 1/4 inch thick. Cut into 1-inch squares and set aside.

Bring broth to boil. Add chicken and dumplings. Return to boil. Mix evaporated milk and flour. When dumplings and chicken are boiling, add milk mixture. Return it all to a boil, reduce to simmer until dumplings are no longer doughy.

Serving Size: 8 1.5-cup servings
