Ingredients

Two 49 oz containers chicken broth
5 medium carrots, sliced into rounds
4 large celery stalks, chopped
1-2 large onions, chopped
1 store-bought rotisserie chicken, meat shredded, skin removed & set aside.
1/2 cup dry sherry
1/2 bunch parsley, chopped finely
Directions
In a large stockpot, heat the broth.
Chop and add the vegetables
Pull meat off the rotisserie chicken and hand shred. Add to the stockpot.
Add half of the sherry and cook, covered, for 20min
Add remaining sherry and parsley and cook for 20min.
Add additional stock, as needed.
Serving Size: Makes 10 servings
