    2.5 lbs raw chicken
    10 oz fresh mushrooms, sliced
    1 medium onion, chopped
    1 tbsp minced garlic
    1 cup 99% fat free chicken broth
    6 oz can tomato paste
    1/3 cup wine (red or white)
    1 tsp ground oregano
    2 tsp Splenda
    1/2 tsp salt
    1/4 tsp pepper
    2 tbsp basil, chopped


Spray a pan with cooking spray and brown chicken on both sides. Cut chicken into bite size pieces. Spray pan with cooking spray, cook mushrooms, onions, and garlic until onions are soft. Place vegetables in bottom of crockpot and layer chicken on top. Mix next 7 ingredients and pour over chicken and vegetables in crockpot. Cook on low for 7-9 hours or high for 3-4 hours. When finished cooking, add basil. Spoon chicken mixture over penne pasta (not included in calorie count). Can top with grated parmesan (not included in calorie count).
