Ingredients

    3 large split chicken breasts with bones (approx 4.5 c. of meat)
    2/3 c. light mayonaisse
    1/4 c. light cream or half & half
    2 T cider vinegar
    1 c. diced celery
    1 T minced onion
    1 t. salt
    1 t. pepper

Directions

Boil chicken breasts for approximately 30 minutes. let cool some, then remove skin (if there) and debone the breasts. Dice the chicken. Mix mayo, light cream, salt, pepper and vinegar. Add the celery and onion to the chicken, then mix with dressing.

Serving Size: makes about 8 half cup servings
