    Olive Oil, 2 tbsp
    2 cloves garlic, chopped
    2 red onions, chopped
    Red Bell Pepper, seeded and chopped
    Vegetable Broth, 4 cups
    *Potato, raw, 2 cup diced
    Chorizo, pork and beef, 5.5 oz
    Zucchini, 2 cup, sliced
    Beans, red kidney, 1 cup
    Heavy Whipping Cream, .5 cup, fluid
    2 tbsp corn starch


Heat oil in a large pan. Add onions and garlic, stirring for 3 minutes. Add the chopped bell pepper and cook for 3 minutes. In a bowl mix cornstarch with enough vegetable stock to make a smooth paste. Stir into pan. Cook, stirring for 2 minutes. Stir in remaining stock, add potatoes, season with salt and pepper. Bring to a boil, lower heat and simmer 25 minutes (until veggies are tender). Add chorizo, beans, zucchini and cook additional 10 minutes. Stir in cream and cook for 5 more minutes. Remove from heat and serve with crusty bread.

  • I'm not quite certain how this recipe came to be. Since I had red beans and chorizo I decided to give it a try. I won't tell you what was needed to flavor this as it would change the OP's entire submission. - 2/19/15
