Introduction

Number of Servings: 4

Ingredients

    Lentils - 2 cups
    Leek - 1
    Garlic - 3 cloves
    Salt and Pepper
    Red wine - 1 fl. oz.
    Water - 1 quart (for simmering)

Directions

1. Finely chop the leeks and garlic cloves and simmer with a little bit of water to prevent browning.

2. Add lentils and stir until the lentils are coated with water. Cook for about 2 minutes.

3. Add warm water (my rule is add double the amount of water to the lentils you have) and bring to a boil - then reduce to a simmer and cover.

4. After about 30 minutes, give it a taste and adjust the seasonings.

5. Once the lentils are tender, add a splash of wine (I prefer sweet red wine) towards the end.

Whether or not you want the extra liquid in the pot is up to you. I think it's tasty.
