Introduction
I had a pineapple to use and I thought pineapple, coconut, hmmm Pina Colada! So I used what i had in my fridge and whipped up a tasty Pina Colada dessert with practically no fat and low on calories! Ingredients

1 carton of Fat Free Cool Whip
1 cup of non-fat milk
1 Pkg. Vanilla Sugar Free Instant pudding
1/12 cup of Shredded Coconut (I toasted 1/4 cup but had most of it left over)
1 tsp of Coconut Extract
1/3 cup of diced pineapple
6 marschino cherries
Directions
Toast your coconut in a frying pan, keep stirring it and when it turns brown, turn off the heat and set aside. About 3 minutes.
In a medium size bowl, add your milk and pudding mix, stir together until no more lumps appear. Fold in all but about 6 tbsp. of cool whip. Mix until well blended. Add your pineapple and coconut extract. Mix until blended.
In 6 custard cups at your pudding mixture.
Take remaining cool whip and place in a baggie, snip of the corner and pipe onto your pudding mix, to make it pretty. Top cool whip with a cherry, and top with roasted coconut.
Refrigerated until ready to eat. You can also freeze this to make an ice cream treat. Thats what I like to do!
