    1 Med-lrg onion chopped
    3 T olive oil4 T tomato paste (one small can) mixed with 3/4 cup water
    2 cans canellini beans - 1 can pureed, 1 can left whole
    2 quarts chicken stock
    2 stalks celery with leaves chopped
    2 large carrots grated on large holes
    1 large bunch Kale stem removed and chopped in 1" pcs
    1 bunch spinach cleaned and chopped
    1/2 green cabbage cored and chopped
    3-4 potatoes peeled and cut up
    1 T sea salt and black pepper to taste
    Optional 1 lb chicken sausage, cut up sautee and drained of fat prior to putting into soup


Sautee onion in oil for approx 3 mins, add tomato paste and water, then add pureed beans. Add celery, Kale, spinach, carrots, cabbage, whole beans and potatoes. Add chicken stock, sea salt and black pepper to taste. Bring to boil then lower to simmer for 1 - 1 1/2 hrs until potatoes are tender. If using sausage place in pot when simmering.

Serving Size: makes approx 12 1 cup servings
