Number of Servings: 1


    2 Whole Chicken Breasts (boneless/skinless)
    Onion chopped
    Green Bell Pepper (may use red, orange, and yellow)
    Swanson's Chicken broth
    1/2 C Gucamole
    12 C Fat Free Sour Cream
    1 C Salsa (mild, medium, or hot)
    1 C Mexican Blend cheese


Preheat oven to 425
Steam Chicken, onions, and peppers in chicken broth. Season to taste. Cook for 5-8 minutes until chicken nearly cooked through. Drain and place in deep casserole dish or cake pan. Mix gucamole and sour cream. Spread evenly over chicken. Cover with salsa. Cook for 10 minutes or until bubbly. Then add cheese and return to oven until cheese is bubbly/browning. Enjoy!
