    2 large sweet potatoes, diced in 1/4-1/2" cubes
    1 can black beans, rinsed and drained
    1 onion, chopped
    2 cloves garlic, minced
    2-3 tomatoes, deseeded and roughly chopped
    1/2 TBSP cumin
    2 tsp chili powder (more or less, to taste)
    1 tsp coriander


Spray large pan with olive oil or cooking spray, add chopped onions and garlic and cook until onions are translucent (4-5 minutes). Add diced sweet potatoes and 1/3 cup water. Cover and cook on medium heat until sweet potatoes are softened but still firm. Add seasonings, black beans and tomato and continue to cook, covered, until sweet potatoes are completely soft.

I served over a heated tortilla with tabasco and a fried egg - delicious!
