Introduction

This is an odd, yet wonderful food. Kids will eat it! Serve w/horseradish/ketchup sauce. This is an odd, yet wonderful food. Kids will eat it! Serve w/horseradish/ketchup sauce.
Number of Servings: 12

Ingredients

    1 sweet potato, peeled then shredded
    One cup of frozen cauliflower, cooked very well
    1/2 cup frozen peas
    1/2 bratwurst, chopped up finely
    1 or 2 TB of flour
    one EGG, beaten
    Spices: cumin, garlic, black pepper, salt, paprika

    Breading:
    1/3 cup cornmeal
    1/3 cup breadcrumbs
    Spices (salt, pepper, basil, cumin, etc.)

Directions

Mash up the cauliflower until it's in small pieces (I use a fork)
Mix shredded sweet potato, cauliflower, peas, egg, spices, and flour. Mush around. if it is too wet and won't stick together, add more flour. If too dry, add some water.

Make into 12 small balls.

Heat oven to 375 F.

Mix the breading ingredients, and the spices. You can spice to taste.

Roll balls in breading and mush into discs. Place on a baking sheet that was sprayed with Pam or similar.
Spray the TOPS of the fritters with the Pam too.

Make sure they are spaced out, not touching.

Bake in the oven -- flipping once, when the bottoms are browned a bit.

It will take 12 or so minutes total. But use your discretion. We want them pretty brown but not burned.

Makes 12 fritters.

Serve with a sauce of 1 part ketchup, 1 part horseradish (if you like). Or premade cocktail sauce.
