Introduction

A casserole version of a your favorite green pepper dish. A casserole version of a your favorite green pepper dish.
Number of Servings: 6

Ingredients

    1 cup rice (cooked with 2 cups water)
    1 pound lean ground turkey
    2 cloves of garlic
    1 XL green pepper, diced
    1 onion, diced
    2 stalks celery, diced
    1 can corn (or frozen corn)
    1 large can diced tomatoes (approx. 3 cups)
    salt and pepper to taste

Directions

While rice is cooking, brown the ground turkey and garlic. Drain and rinse the ground turkey.
Put the meat back in the pan, add the green peppers, onion, celery, corn & tomatoes in the pan and simmer until the rice is done.
Add salt and pepper to taste.
Put in a casserole dish and bake (Or we just eat it after mixing in the rice!!!)

    Pretty good. DH and I found it a little bland, so we added a bit of Old Bay seasoning. Next time, I might liven it up by adding a little bit of taco seasoning to the meat as it cooks. - 10/9/08

    Yum! An easy recipe with great taste! I used no-salt added diced tomatoes, 2 cups instant brown rice, my ground turkey package was 1.3 lb.s, and I upped the green pepper to 1.5. MH added hot sauce to his bowl.
    With the quick cook rice, this is a super fast recipe. I will definitely make it again!

    I make a meal very similar to this (instead of diced tomatoes, I use a jar of salsa) and I love it. We make it at home at least every two weeks. - 7/29/07
