    1 Haas avocado
    2 T lemon juice
    2 T cilantro
    3 cloves garlic
    1 t salt
    1/2 red onion
    1/2 beefsteak or 1 plum tomato
    1/2 14.5-oz. can black beans, drained
    1/2 14.5-oz. can sweet corn, drained
    1/2 8-oz. package queso fresco
    1 head romaine lettuce


In a blender, mince garlic cloves, then add cilantro, followed by the avocado lemon juice, and salt. Move guacamole to a large salad bowl.

Finely chop 1/2 red onion, followed by the tomato and queso fresco, and add to the salad bowl. Add the beans and corn. Roughly chop the lettuce and toss.

Serving Size: Yields lunch for 4
