Ingredients

    4 large apples peeled, cored and sliced
    1/2 cup raisins
    1 tspn cinnamon
    1/2 cup crushed walnuts
    1 tbsp honey
    juice from 1 lemon

    Batter:
    2 cups whole-wheat floor
    2 tspn baking powder
    1 tspn salt
    3 tbsp brown sugar
    2 large eggs
    3 tbsp sunflower oil
    1/2 cup sweetened apple sauce
    1 cup milk 1% fat







Directions

serves 12

1. Preheat oven to 175"C
2. Dilute honey in lemon juice
3. Put apples/raisins/walnuts cinnamon and honey/lemon juice in baking dish
For Batter:
1. Mix all wet ingredients together
2. Add sugar and mix and then rest of dry ingredients
3. Pour over apples and bake for 60min or until toothpick comes clean

    Very Good
    Followed this exactly. Needed more batter and I should have used a larger than 9" round pan (had to put some in a mini loaf). Cooked at 350 for 40 minutes. That was about right (didn't trust the 175 degrees above. Tastes treat for whole wheat, not too sweet. - 4/25/14

    I used Granny Smith apples, only a smattering of raisins, 1/4 cup finely chopped (not crushed) pecans, and 2 teaspoons brown sugar instead of honey. Oat flour instead of wheat, and only 3/4 cup of milk. Baked at 350 for 40 minutes in a 10x10 casserole pan. Great with whipped cream. - 3/18/11

    Is the temp really 175? And what size pan was this baked in? That's not included in the directions

    Used Walnut Oil (for Sunflower Oil) & nonfat milk (for 1% milk). Was ready in 40min at 350F. Made 1.5 times the batter (4 apples were already perfect) & it was just right for two 9" cake pans. Carrot cake frosting made a healthy, & yummy layered bday cake! Leftovers are great for breakfast! - 11/12/07
