    2 t canola oil
    3 T yellow cornmeal
    1 T cayenne pepper (more or less to taste)
    1/2 pound pork tenderloin, trimmed and cut into 1/4 inch pieces
    2 C coarsely chopped fresh tomatillos
    2 C chicken broth
    1 (4.5 ounce) can choppedmild green chiles, drained
    1 jalapeno pepper, seeded and finely chopped
    1/2 C thinly sliced green onions
    1/4 C chopped fresh cilantro
    2 T tequila
    1/4 t salt


Heat oil in a large nonstick skillet over medium-high heat.

Combine cornmeal and cayenne pepper in a medium bowl. Add pork, tossing to coat. Remove pork from bowl, reserving any remaining cornmeal mixture. Add pork to pan; saute 5 minutes or until browned. Sir in remaining cornmeal mixture; cook 30 seconds, sitrring constantly.
From here you have 2 options

Option 1 - transfer pork and all remaining ingredients to crockpot and let simmer on low heat for at least an hour or all day.

Option 2 - stir in tomatillos, broth, chiles, and jalapeno to skillet containing the browned pork.; bring to a simmer over medium-low heat. Cook 8 minutes or until tomatillos are tender. Stir in onions and remaining ingredients; simmer 1 minute.
