    1 lb. ground turkey
    1 medium onion, chopped
    1 28 oz or 32 oz can of Enchilada Sauce
    12 corn tortillas
    Garlic powder
    Olive oil


Preheat oven to 350 degrees.
In a non-stick pan, drizzle 2 tbl. olive oil. Heat pan.
Add onion to the pan and cook for 2-3 minutes. Add the ground turkey and continue cooking until meat is browned. Drain meat well. Add 1/4 cup of enchilada sauce to the meat mixture. Turn heat to low and allow to simmer for a few minutes. At this time, add garlic to your meat mixture (preference level is yours)

Spray a 9 x 13 pan with No-Stick and pour 1/4 cup of the Enchilada sauce in bottom of pan. Spread out with spoon, it will be thin.

Now in batches of 3, warm corn tortillas in the microwave for 30-45 seconds, until pliable.
Scoop about 2 TBL of the meat mixture in 1 tortilla, roll and place seam side down in pan.
Repeat until all 12 tortillas have been used.

Pour remaining Enchilada Sauce over enchiladas. If you have any meat mixture left sprinkle it over enchiladas. Sprinkle the 1/2 cup of cheese over enchiladas. Bake for 25-30 minutes until sauce bubbles and chees is melted and slightly brown.

Allow to rest for 10-15 minutes before serving.
