Introduction

Ingredients

    Olive Oil, 1 tbsp
    Zucchini, 1 cup, sliced
    Onions, raw, .25 cup, chopped
    Spinach, fresh, 2 cup
    Mushrooms, fresh, 1 cup, pieces
    Red Ripe Tomatoes, 2 medium whole (2-3/5" dia)
    Balsamic Vinegar, 5 tablespoon
    Couscous, 2 cup, cooked
    Goat Cheese, Soft, 6 oz
    Garlic powder, 3 tsp

Directions

Cook the couscous according to the directions on the box and set aside. I suggest adding some powdered garlic for taste.

Add 1 tbsp of olive oil to a saute pan and wash/cut the vegetables you will be using. Add sliced zucchini and onions to the pan and allow them to cook until they look lightly translucent (approx. 5 min). Add the chopped spinach, mushrooms and tomatoes and allow them to cook for another 5 minutes. Lastly, stir in the balsamic vinegar and lower the heat. Let the food simmer for 5-10 minutes until the vegetables look thoroughly cooked.

Serve the dish with half of a cup of couscous and approximately 3/4 cup of vegetables. Top it with an ounce and a half of goat cheese.
