Introduction

Ingredients

    3 T olive oil
    1 entire KNOB of garlic, crushed
    4 large onions, chopped
    4 large green peppers, chopped
    2 lbs pounds of carrots, chopped
    4 28-oz cans crushed tomatos with added puree
    2 12-oz cans tomato paste, thinned with 12-oz water
    1 6-oz can tomato paste, unthinned
    1 cup red wine
    2 T sugar
    lots & lots of oregano, parsley, basil, red pepper flakes & black pepper

Directions

serving size is 3/4 cup

1. Put oil in large (10-12 qt) stockpot & heat to medium.
2. Add garlic & cook for 1 minute til aromatic
3. Add onion & cook five minutes
4. Add green peppers and carrots and cook 10 minutes
5. Add all of the dried spices & mix well
6. Add crushed tomatos, all tomato paste, red wine & sugar & mix well.
7. Return to very gentle boil
8. Let cook ALL DAY (at least 6 hours), stirring every 20-30 minutes, so it doesn't stick/burn.

Freezes VERY WELL -- I freeze it in 1 quart plastic containers.
