    Rainbow pasta, or any veggie pasta (I recommend Eddie's) - approx. 2 cups
    Raw garlic (you can microwave it to take out some of the bite if you like) - approx. 3 cloves
    Pine Nuts - approx. 1/4 cup
    Sun Dried Tomatoes (dried, not in oil) - approx. .5 cup
    Extra Virgin Olive Oil - approx. 3 tablespoons


Cook the pasta to your liking (I recommend al dente). Julienne the sundried tomatoes. Slice the garlic (or chop or mince if you prefer). Toss all the ingredients together and enjoy hot or cold. The flavors get better the longer the pasta sits.

The amounts I list are purely suggestions...change them to your liking or add to them. Frozen peas (thawed) are good.

You can cut back on the calories by choosing a lower-carb, higher-fiber and/or higher-protein pasta.
