Number of Servings: 6


    Butternut Squash, 1 whole
    Carrots, raw, 1.5 cup, chopped
    Gala Apples, 2 medium
    Butter, unsalted, 1 tbsp
    Brown Sugar, 2 tsp packed
    Cinnamon to taste
    Nutmeg to taste


1. Quarter and remove seeds from the squash
2. Microwave squash in a dish with 1" water for about 10 min.
3. Scrape out skin and spread pulp in the bottom of a pyrex baking dish.
4. Chop carrots and apples and place them on top
5. Melt butter and drizzle over dish
6. Sprinkle with cinnamon and nutmeg
7. Bake at 375 for 50 min to an hour, until carrots are soft

Serving Size: about 5-6 one cup servings
