    6 Red Skinned Potatoes
    1/2 cup Chopped onion
    1/4 cup extra virgin olive oil
    1/2 cup red wine vinegar
    1 tablespoon Dijon Mustard
    3 fresh basil leaves
    Salt and papper to taste.


Mix Oil, Vinegar, Dijon, and chopped onions in a cup, and set aside.
Heat oven to 375.

On a cookie sheet, or roasting pan, spray with cooking spray.
Dice cleaned potatoes, into bite size pieces.
Place onto baking pan, or pan in single layer, and sprinkle with salt and pepper.
bake until golden brown, turning them once midway through cooking. Allow to crisp lightly.
Around, 20-40 minutes, depending on elevation.

Remove from oven and pour potatoes in a large bowl. Pour dressing mix over top and stir gently with large spoon. chop fresh basil leaves and place in the bowl. Serve warm if preferred. Best when chilled a few hours.
Low fat, and yummy!
