    1 medium onion, chopped
    4 large eggs,beaten
    1/2 cup 2% milk
    1/2 cup plain greek yogurt
    dash nutmeg
    6 oz fresh spinach (I used half of a 10 oz box of frozen, thawed)
    2/3 cup mozzarella cheese, shredded
    2 oz. shredded swiss cheese, shredded (I used Finlandia thin sliced and tore it into tiny pieces)
    1/2 cup whole wheat flour
    1/2 tsp baking powder


1. Preheat oven to 350 degrees. Spray non stick pan with a little oil. Cook onion about 3 minutes.

2.In bowl mix eggs, milk, yogurt and nutmeg. Add onions, spinach, and cheeses mixing well. Add flour and baking powder, mix until combined.

3. Spray pie dish with a little oil, pour quiche mixture into dish. Bake at 350 degrees for 30 minutes or until knife inserted comes out clean.

4. Cut into 8 sllices. Enjoy!
