    Boneless, skinless chicken breasts
    Low sodium chicken broth
    olive oil
    balsamic vinegar


Cut the chicken in halves
In a large plastic bag, combine flour, salt and pepper.
Shake chicken in the bag
In a large skillet, heat olive oil. Place chicken in skillet. Cook to golden brown on each side. Add diced onions and mushrooms. Cook for 10 minutes.
Add chicken broth and vinegar. Cook until chicken is cooked through.

Serving Size: makes 8 half breast size servings
