Ingredients

    1 cup Brown rice
    1.5 T sesame oil
    .5 c zucchini sliced
    4 sm scallions sliced
    .5 c edamame (frozen)
    .5 small scarrot sliced
    3 pineapple sliced chopped
    4 eggs
    1 T soy sauce

Directions

Sautee veg in sesame oil, adding edemame..stir fry til al dente.
Add pineapple and rice. Beat eggs with soy sauce and add. Turn and stir til cooked and done.

Serving Size: makes generous 2 cup servings.
