    14 brown rice crackers
    1 medium carrot, grated
    1 tbsp light mayonnaise
    1 medium avocado
    Salt and fresh ground pepper to taste


Mix the grated carrot together with the mayonnaise.
Chop the avocado into cubes and add to mixture. (Try not to blend too much so there are tasty chunks in the mixture.)
Grind salt & pepper into the mixture.
Spread onto crackers.
Serving size: 7 crackers.
