These mini bites are a quick and easy way to pop some protein. They can be reheated in the microwave in under 30 seconds. Freeze flat or refrigerate left overs. You'll need a 24 mini muffin pan. Number of Servings: 24

Ingredients

    5 large eggs
    1 cup mushrooms
    2 oz soft goat cheese

Directions

Preheat the oven at 350.

Mix the 5 eggs in a blender or with an electric beater. Set aside.
Chop the mushrooms to pieces smaller than a pencil eraser.
Add the mushrooms to the egg and mix together.
Put a tablespoon of the egg mixture in each muffin cup of your 24 muffin cup pan. Divide your cheese into 24 parts and add a part to each muffin cup.

Cook in preheated oven for 30 minutes.

Serving Size: Makes 24 serving size bites
