    3 red bell peppers
    1 large package of fresh mushrooms
    2 packages of Manicotti Noodles (some may not get filled)
    2 eggs
    8 oz mozzarella cheese
    2 tubs of lowfat ricotta cheese
    2 jars favorite pasta sauce
    italian seasoning
    garlic salt


Preheat oven & start boiling water.

Slice bell pepper into thin slices; chop mushrooms into bite size pieces.

Cook manicotti noodles as directed on package while sauteing bell peppers and mushrooms with cooking spray in pan. Once noodles are done, veggies should be too. Remove noodles & veggies from pans to cool (place on foil).

Mix egg, cheeses, seasonings, and veggies in bowl.

Spread thin layer of tomato sauce into 2 9x11 glass dishes. Stuff manicotti noodles with cheese veggie mixture & place into glass dishes. Cover with remaining sauce.

Bake for 30 minutes uncovered in oven.
