A deliciously satisfying egg casserole A deliciously satisfying egg casserole
Number of Servings: 8


    4 large eggs
    4 egg whites
    1 large, thinly sliced, boiled potato (250 grams, or 4 oz)
    Leeks, onlons, scallions, garlic: diced and sauteed (as much as you want)
    1/2 cup flour (optional)
    125 grams (4oz) shredded sharp cheddar
    4 oz frozen, chopped, thawed spinach (optional)
    1/2 cup skim or 1% or 2% milk (recipe calculated for skim milk)
    1/2 TBS baking powder
    1/2 TBS baking soda
    1 tsp salt
    1 tsp black pepper
    1 can diced green chiles (optional)
    1 can whole kernel sweet corn


I love this with a can of dice green chiles added to the mixture!


Boil potatoes. Drain and set aside. Sautee onions and leeks. Set aside. Whisk eggs, white flour, and salt together. Fold in cheese, onions, and leeks. Spread sliced potatoes in bottom of greased casserole dish. Pour egg mixture over potatoes. Bake at 350F for 20-30 minutes, until set.
