A good rice dish that meets some nutritional goals! A good rice dish that meets some nutritional goals!
Number of Servings: 6


    1 C diced Bok Choy
    1 large vidalia onion - diced
    1 large bag of Success boil-in-the-bag rice.
    1 Can cream of potato soup
    1/2 C diced mushrooms
    1/2 C beef stock (veggie stock for vegans)
    1/2 t Mrs Dash Garlic and Herb Seasoning Blend
    1 t Garlic Powder
    1/4 t ground Thyme
    1/4 t ground black pepper


Heat over to 400

Dice the Bok Choy, Mushrooms and Onions - add to a medium-sized casserole dish.
Open rice and empty into dish.
Mix cream of potato soup with beef broth - add to mix.
Add seasonings to top

Cover with foil - Bake for 15-20 minutes (until veggies and rice are edible)

Serving Size: Enough for 6 to 8 people
