    * Wheat bran, crude, 1 cup (remove)
    * *Wheat flour, white, all-purpose, enriched, calcium-fortified, 1 cup
    * Baking Powder, 1 tsp
    * Baking Soda, 1 tsp
    * Salt, .5 tsp
    * Cocoa, dry powder, unsweetened, 2 tbsp

    * Olive Oil, 2 tbsp
    * Eggs, 2 large, beaten
    * Milk, 1%, .25 cup soured with
    * Vinegar,1 teaspoon
    * Banana, fresh, 1.25 cup, mashed


Preheat oven to 400 F
Oil muffin tin.
Combine dry ingredients & make well in centre.
Combine oil, sugar, eggs
Mix in sour milk & bananas
Mix till moist, ignore lumps
Fill muffin tins 3/4 full
Bake 20 to 25 min
