Introduction

Ingredients

    Cream of mushroom soup, condensed, 1 small can
    cooked chicken breast, 3 cups
    diced carrot 1 cup
    diced celery 1 cup
    diced onion 1/2 cup
    chicken stock (use reduced sodium if you wish) 2 cups
    water 1 cup
    fresh parsley 1 tbsp.
    *can salt and pepper to taste
    olive oil, 1 tbsp

Directions

In a stew pot, heat olive oil over medium to medium low heat. Add diced vegetables (except parsley). Allow to soften and become translucent. Add cream of mushroom soup, stock, water, and diced cooked chicken meat. Bring to soft boil, cover, and simmer for 20-30 minutes. Veggies should be tender. Add fresh parsley and simmer for another 1 - 2 minutes. Serve with your favorite bread, rice, pasta, biscuit, or crackers.

Serving Size: Makes approximately 6 1 cup servings
