Introduction

Ingredients

    1 1/2 cups water
    3 cups King Arthur Whole Wheat Flour
    1 cup King Arthur Unbleached Bread Flour
    2 T. Florida Crystals Cane Sugar
    1 1/2 T. Organic Valley Nonfat Dry Milk
    1 tsp. Sea Salt
    1 1/2 T. Land O' Lakes Salted Butter
    2 T. Arrowhead Mills Vital Wheat Gluten
    1 1/2 tsp. Red Star Active Dry Yeast

Directions

Pour water into the bread machine loaf pan. Sprinkle flour over the water. Place the sugar in one corner of the loaf pan, then do the same with the dry milk, sea salt, and cubed butter (placing each ingredient in separate corners). Sprinkle the wheat gluten along one inside edge of the pan. Use your finger to make a small well in the center of the flour, then place the yeast in the well making sure it doesn't touch any ingredient other than flour.

Secure the loaf pan inside the bread machine and close the lid. Plug in the machine. Press the "Select Course" button repeatedly until option "Basic Wheat" is illuminated. Press the "Start/Reset" button. After 3 hours and 45 minutes, when the machine beeps upon completion of the bake cycle, promptly remove the loaf pan. Turn the loaf out onto a cooling rack; Cool completely. Slice into 18 pieces and store in an extra large bread bag (available online from Pleasant Grains). 1 serving = 1 slice.
