    3 eggs
    2 egg whites
    1/2 cup asparagus, chopped
    1/2 cup mushrooms, chopped
    1/4 cup Swiss cheese, shredded
    nonstick cooking spray

    2 slices whole-grain bread
    2 oranges


Preheat oven to 350.

Whisk together eggs and egg whites; mix in asparagus, mushrooms, and Swiss cheese. Pour mixture into 6 muffin cups coated with nonstick cooking spray. Bake 20-25 minutes, until eggs are set.

Eat 3 mini quiches with 1 slice of toasted whole-grain bread and an orange. (Save remaining quiches for another breakfast.)
