Ingredients

6 inner leaves of romaine lettuce
4 tablespoons fat-free cottage cheese
1 tablespoon lime juice
1 tablespoon natural peanut butter (no sugar!)
1 teaspoon thai green curry paste
1 teaspoon roasted black (or white) sesame seeds
Carrot sliced into 4" matchsticks (1/2 medium carrot)
Dash Basil (I used dried but fresh is better if you have it!)
Dash black pepper
1/2 cup alfalfa sprouts
Directions
Rinse romaine leaves and trip off 1" of bottom stem. Shake dry.
Peel carrot and chop into 4" matchsticks.
Mix cottage cheese, peanut butter, lime juice, curry paste, sesame seeds and spices.
Spoon filing into the inner groove of the romaine leaves.
Garnish with carrots matchsticks and sprouts.
Eat like tacos! Enjoy!
