    1 lb of whole carrots, sliced diagonally
    1/2 c. red onion, chopped
    2 tbs olive oil
    1 tsp salt
    1 tbs black pepper, freshly ground


Preheat oven to 425F.

Toss all ingredients together. Spread on baking sheet in a single layer. Line baking sheet with aluminum foil for easy clean up.

Place in the oven and cook for approximately 30 minutes or until carrots are tender and the carrot's natural sugars begin to caramelize.
