Introduction

I was craving a light pasta dish where I could use my fresh basil from my garden, it maybe high in carbs but it is also high in fiber and low in fat! I was craving a light pasta dish where I could use my fresh basil from my garden, it maybe high in carbs but it is also high in fiber and low in fat!
Number of Servings: 4

Ingredients

    8 ounces of Whole What Thin Spaghetti
    1 tbsp of Olive Oil
    1/4 small onion diced - yellow
    1 bunch of fresh basil leaves
    Ground Black Pepper to taste
    1 14.5 oz can of whole tomatoes with juice
    1 8 oz can of tomato sauce (1 cup)
    2 Tbsp of Parmigiano Reggiano shredded cheese
    1 tsp of dry red pepper flakes (optional)



Directions

1. Bring pot of water to a boil and cook pasta according to directions.

2. Meanwhile in a skillet, heat oil over medium heat. Add onion, garlic, half of basil, pinch of salt & pepper. Cook stirring occasionally, until translucent, about 5 minutes. Ass the tomatoes and tomato sauce. Break up the tomatoes with the side of the spoon. Simmer for 4 minutes.

3. Drain the pasta and place in a large bowl. Pour over the sauce and add all but a handful of the basil. Toss until pasta is well coated with sauce. Top with remaining chopped basil and parmigiano reggiano cheese and dried red pepper flakes.

Serve and enjoy!!
