Introduction
This is a fairly simple egg omelet which I make as a high protein snack. I vary the veggies and like to add spinach, onion, tomato, bell peppers, olives. I also vary the cheeses and choose between feta, mozzarella, parmesan, cheddhar. I use a light dusting of olive oil on the pan by using an olive oil spray. I season with Italian seasoning herbs, sea salt and freshly cracked pepper. Finally I use Srirachi hot sauce liberally as a condiment. Ingredients

1 large egg
3 large egg whites
1 small red onion diced
1 plum tomato diced
1 cup spinach chopped
Olive oil spray
1 ounce grated mozzarela
1/2 ounce parmesan grated/shredded
sea salt
pepper mill
Italian seasonings
Srirachi hot sauce (condiment)
Directions
1) Wash and chop your veggies. Saute in non-stick pan with light spraying of olive oil. Add salt & pepper as desired. Set aside.
2) Crack 4 eggs into a bowl. Scoop out 3 of the yolks. Beat the eggs to fluff them up a bit. (optional: add 1 tbsp of milk for more fluffy omelet) I also add a dash of sea salt, freshly cracked pepper and some dried Italian herbs to the eggs before beating.
3) lightly cover the non-stick pan with olive oil spray. Add beaten egg mixture. Cook under medium heat until the eggs are set. Add grated cheeses to one side and fold omelet over it.
4) Plate omelet onto dish. Cover with sauted veggies.
5) Enjoy with Srirachi hot sauce.
