    2 tsp olive oil
    4-oz snapper filet
    1 1/2 cups sugar snap peas
    salt and pepper
    1/2 cup water
    1/3 cup whole-wheat couscous
    1/4 cup black beans, rinsed and drained
    1/4 mango, cubed
    2 tbsp cilantro, minced


Heat a 10-inch skillet over medium heat; coat with olive oil. Saute snapper for 8 minutes.

Meanwhile, steam peas for 5 minutes. Season fish and peas with salt and pepper.

In a pot, bring water to a boil and add couscous. Turn off heat and cover; let stand 5 minutes. Fluff couscous with fork and stir in black beans, mango and cilantro. Serve with snapper and peas.
