    Mushroom Marinara
    1 14oz can Contadina Tomato Sauce
    1/2 Bay Leaf
    1 tsp Oregano
    1 tsp Thyme
    1 tsp Basil
    2 Cloves Garlic
    2 tsp Extra Virgin Olive Oil
    1 cup sliced Crimini Mushrooms

    Chicken Meatballs
    1/2 # Ground Chicken Breast
    1 egg white
    salt and pepper
    1/4 cup Shredded Parmesan
    1/8 tsp ground toasted Fennel seed(optional)
    1/4 tsp dried basil
    2 pieces of regular Melba toast


Marinara: In a large enough pot to hold everything, saute the Mushrooms with the Olive Oil. Add the Garlic and stir until lightly browned. Add Tomato Sauce and herbs bring to a simmer.

Chicken Meatballs: Turn the Melba toast into breadcrumbs. Mix ingredients well in a mixing bowl. Pre heat a saute pan to medium high. Spray pan with Pam.

With a small spoon, spoon out a small lump of meat and form into small balls and place in pan around in a circle. Spray tops of balls with Pam.

Sear off balls until browned and then turn them over with tongs browning on the other side.

Pour a bit of water into the pan to deglaze and steam the balls a little. Add balls to marinara and simmer 20 minutes.

Miracle Noodles: Prepare as described on package.
