Number of Servings: 7


    8 - c water
    2 - c Epicurean Specialty Gourmet Bean Blend
    1 1/2 - large onion coarsely chopped
    5 - med carrots thickly sliced
    5 - med celery stalks thickly sliced
    6 - turkey bacon slices


Rinse beans. Slice bacon across width into 1/4 strips. Cut up veggies. Combine beans, turkey bacon and 1/3 of the veggies with water in a large pot. Bring to a boil for 3 minutes. Reduce heat to low and simmer for 1.5 hours. Add remaining veggies and continue to simmer for an additional 30 minutes.
