Introduction

Ingredients

    1kg cubed lamb with fat removed
    1 packet of cherry or baby plum tomatoes
    1 chopped green pepper
    1 chopped red pepper
    1 chopped white onion
    Half a cup of tomato soup or chopped tomatoes
    Half a cup of spinach (frozen is fine)
    Fresh herbs such as rosemary and mint

Directions

Put all the meat into the slow cooker and cook on high for 2 hours. Add the spinach, onion and tomato soup and cook on low for 4 hours. Add the remaining ingredients and cook on low for a final 2 hours.

If you're short of time or cooking while out of the house, all of the ingredients can be cooked on low but a little extra time may be needed. Consider stir frying the pepper separately as it might go soggy if cooked all day.

Note - you can add any other vegetables you like. Carrots work well. If cooking hard or root vegetables, these can be added early. If cooking softer veges such as broccoli - add near the end so they don't get too soggy.

For a really easy dish, try adding a handful of new potatoes with the meat.
