    * Cauliflower, raw, .5 head, large (6-7" dia) (remove)
    * Buttermilk low fat, .20 cup (remove)
    * Fresh Chives, 1 tbsp chopped (remove)
    * Mushrooms, fresh, .4 cup, pieces or slices (remove)
    * Cabot Vermont 50% Light Cheddar Cheese, 2 oz (remove)
    * Swanson Chicken Broth 99% Fat Free, enough to cook in a microwave dish (remove)
    Salt and pepper to taste.


Cut up half of a head of cauliflower (about 3-4 cups). Spray with butter spray, put a little fat free chicken broth in a bowl in the microwave, covered, for 3-5 minutes (I did 4 minutes).

Dice the mushroom and chop the chives while the cauliflower is cooking. Grate the cheese.

When the cauliflower is cook, put it in a blender or food processor and blend it to the consistency of mashed potatoes.

Add the buttermilk, cheese, chives, salt and pepper and cheese.

Serving Size: Makes 2 generous servings.
