    2 Tbsp Extra Virgin Olive Oil
    1/4 cup sweet onion, chopped
    2 cloves garlic, minced
    3 cups fresh zuccini, chopped in bite sites pieces
    1 can tomatoes in juice
    2 tsp dried oregano
    2 tsp dried basil or several fresh basil leaves
    2 tsp dried thyme


In a large skillet over medium heat, saute sweet onion and garlic in olive oil until onion and garlic are soft but not brown - about 2 minutes. Add zuccini, oregano, basil, thyme, and canned tomatoes. Cover and continue to cook until the zuccini are soft but not mushy - about 15 minutes.

You can substitute canned tomatoes with herbs for plain tomatoes and omit oregano, basil and thyme.

Leftovers make a great side for an omlet.
