    * * Garlic- 3 Cloves
    * *Tomatoes, red, ripe, canned, wedges in tomato juice, 2 cup
    * Yellow Sweet Corn, Frozen, 2 cup kernels
    * Onions, raw, 1 large
    * *chicken bouillion (1 cube), 2 serving
    * Beans, black, 4 cup (3/4 pound dry)
    *Salt, pepper, Mexican Oregano, Cumin, red pepper flakes to taste.


Soak beans overnight.

Place in large saucepan and cover with water by 2". Add chopped onion, garlic, bouillion cubes, and spices. Bring to boil, then reduce heat and simmer for 1 1/2-2 hours, until beans are tender.

Drain any remaining water, then add tomatoes and corn and heat through.

Serve with rice and topped with fat-free sour cream, guacamole, or shredded cheese.

Serving Size: Makes 8 3/4 cup servings.
