    1 lb tomato basil pasta (cooked according to pkg directions)
    1 shallot
    6 cloves garlic, minced
    1/4 cup extra virgin olive oil
    1/4 cup vegetable stock
    4 Roma tomatos, chopped
    1 pkg oyster mushrooms, chopped
    1 TBS basil (dried)
    1 tsp thyme (dried)
    2 tsp oregano (dried)
    1/2 tsp salt
    pepper to taste


1. cook pasta according to package directions; drain
2. in saucepan over med-low saute shallots & garlic in olive oil until translucent
3. add tomatoes, basil, thyme, oregano & salt & cook for approx. 10 minutes
4. add mushrooms & stock, cook for approx 5 minutes
5. add pasta, cook until heated through
6. divide into 4 equal portions

Serving Size: makes 4 equal servings
