Introduction

Number of Servings: 8

Ingredients

    6 sun dried tomatoes
    1 cup boiling water
    1/2 cup oil
    3 cloves garlic
    2 T balsamic vinegar
    1 T lemon juice
    2 fresh basil leaves
    1/2 tsp kosher salt
    1/2 tsp fresh ground pepper
    tiny pinch of sugar

Directions

Soak tomatoes in boiling water for 30 minutes. Drain and reserve 1/4 cup liquid.

Combine all ingredients, including reserved water, in a food processor and process until smooth.


Serving Size: makes 8 2-Tbls servings
