Ingredients

    * Onions, raw, 1 medium (2-1/2" dia) (remove)
    * *Peppers, sweet, red, fresh, 1 large (2-1/4 per lb, approx 3-3/4" (remove)
    * Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia) (remove)
    * Asparagus, fresh, 25 spear, large (7-1/4" to 8-1/2") (remove)
    * *Extra Virgin Olive Oil, 2 tbsp (remove)
    * Salt, 1 tsp (remove)
    * Pepper, black, 1 tsp (remove)

Directions

Preheat oven to bake at 400 degrees. Break off hard part of asparagus & place into baking dish. Cut onions & peppers into strips & place into dish along with asparagus. Add olive oil, salt, & pepper. Cover dish & shake well to mix vegetable & to coat well with oil,salt, & pepper. Uncover & bake in oven for about 20 mins. Asparagus will still be crisp!
