    Aurora Polenta with Sundried Tomatoes
    398ml can of diced tomatoes
    1 tsp oregano
    3 tbsp extra-virgin olive oil
    1 clove chopped garlic
    salt and pepper to taste
    parmesan reggiano


1. Slice polenta into 1/2 inch rounds and place in a lightly oiled baking dish.

2. In a bowl, combine diced tomatoes, oregano, olive oil, chopped garlic, salt, and pepper to taste.

3. Spoon mixture onto each polenta slice and top with grated parmesan cheese.

4. Bake in a 350F oven for 20 minutes and serve.
